
Gluten Free Bread: Zucchini Bread
Ingredients:
4 cups Shredded zucchini
2 1/4 cups gluten free flour
3/4 cup Teff flour
2 1/2 cups sugar
1 1/4 cup oil
4 eggs beaten
1 Tbs Vanilla
1 tsp Cinnamon
1 1/2 tsp Celtic sea salt
1 1/2 tsp baking soda
1/2 tsp baking power
1/4 tsp allspice
Mix ingredients in order given. Grease two 9″ x 5″ loaf pans. Bake at 350 degrees for 1 hour or until a toothpick inserted in the middle comes out clean.
